Banana Bread


I hate bananas. Well, for the most part. The only bananas I will eat as is are still half green, firm, and kinda tart. The moment I come across a mushy, brown banana, I usually run away. But then came the deliciousness which is Banana bread. The one time (besides smoothies) that I will touch and handle a mushy banana. 

It's such a simple recipe that it's become my go-to. I usually have most of the ingredients on my shelf, and it uses up the bananas!


Banana Bread

time: 60-80 minutes

ingredients
1 3/4 cups all-purpose flour
1 1/2 tsp baking soda
3/4 tsp kosher salt
3 large eggs
1 1/2 cups sugar
2 large bananas
3/4 cup vegetable oil

instructions
1. preheat oven to 350 degrees. line a 9x5x3'' loaf pan with parchment paper

2. mash the bananas in a large bowl with a fork until there are mushed with minimal lumps
 3. whisk eggs, sugar bananas and oil until smooth. 
4. add in flour, baking soda and salt.
5. stir until just combined
 6. scrape batter into pan
7. bake until a tester inserted into the center of the bread comes out clean, 60-80 minutes. transfer to a wire rack, let cool in pan for 15 minutes. turn out into rack and let cool completely
